Would the new pressure table follow the old in terms on OD? my assumption would be that it should be 200mm? The ID would also be as before?
What sort of material do you recommend for this?

If you are converting a 200 mm clutch, you can use same ID and OD.
If you are converting a 180 mm clutch, get a 200 mm clutch disc first. Take the desired ID and OD from the section where the friction material of the clutch disc sits.
Standard machine steel is OK for the table.

Please can you explain why it is necessary "to turn a new pressure table which is heat shrunk into the flywheel" if you are starting off with a 200mm clutch?

The 1191cc 2C berlina does have the same 180mm clutch as the 1216cc coupe. The 2C has however less power.
The conversion is possible for the 2C. No problem. Just costly if you have to pay for all the machining. If it is necessary, I can't say. If I had a 2C I would do it only if I had problems with the original clutch.

I am in the process of changing the flywheel of my S1 as the teeth have been damaged. I found an italian firm which makes new flywheels but I am not sure whether the valeo pressure plate will fit on it. I am attaching pictures of the new flywheel maybe you can give me some advice. It is made of Z104 steel, weighs 6.6kg, has 104 teeth and it is 27mm thick.

I forgot which series has the 104 teeth and which the 126 teeth.
It looks however like an S2 flywheel.
If so, it means that you also have to change to S2:
- the starter motor
- flywheel housing (rear part of engine)
- and the clutch housing (front part of gearbox).
And of course the release bearing.
Note that the flywheel you show fits crankshafts of the 1300 and 1231cc engines. It does not fit crankshafts of the 1216cc and smaller engines.
If your have a 1231cc or 1300 cc car and if it were my car I would try find a good S1 flywheel and keep the old fashioned clutch.
On the smaller engines the clutch is 180mm. This is a bit small. I would convert that to 200mm. The most reasonable option is to convert to 200mm diafragm.

The engine is a S1 1300 and the 104 teeth flywheel belongs to a S1 so in this case if I install the new flywheel all I need is a 200mm clutch and a 200mm diaphram pressure plate and a S2 thrust bearing. Please correct me if I am wrong as I really would like to make this modification as I was never happy with the old system.
